Ingredients
  

  • 1 ½ lbs boneless skinless chicken breasts
  • 1 red bell pepper thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 medium onion thinly sliced
  • 3 cloves garlic minced
  • 1 cup low-sodium chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon sea salt
  • 4 slices reduced-fat provolone cheese
  • 4 whole wheat hoagie rolls
  • optional toppings: sautéed mushrooms sliced jalapeños, or creamy avocado slices

Instructions

  • Place the boneless chicken breasts at the bottom of the crockpot.
  • Layer the sliced red and green bell peppers, onion, and minced garlic over the chicken.
  • In a small bowl, mix the chicken broth, Worcestershire sauce, oregano, black pepper, and sea salt, then pour over the chicken and vegetables.
  • Secure the lid and cook on low for 6-7 hours or high for 3-4 hours until the chicken is cooked through.
  • Remove the chicken and shred it with two forks, then return it to the crockpot.
  • Lay the provolone cheese slices on top and cover for 5-10 minutes to melt the cheese.
  • Cut the hoagie rolls in half and fill each with the cheesy chicken and vegetable mixture.
  • Add any optional toppings and serve warm.
