Ingredients
  

  • 1 ½ lbs boneless skinless chicken breasts
  • 1 medium onion thinly sliced
  • 1 medium green bell pepper thinly sliced
  • 1 medium red bell pepper thinly sliced
  • 3 cloves garlic finely minced
  • 1 cup low-sodium chicken broth
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon salt
  • 4 whole wheat hoagie rolls
  • 1 cup reduced-fat provolone cheese shredded
  • Fresh parsley chopped (for garnish)

Instructions

  • Place the boneless chicken breasts at the base of the slow cooker.
  • Layer the sliced onion, green bell pepper, red bell pepper, and minced garlic on top of the chicken.
  • In a small bowl, combine the chicken broth, Worcestershire sauce, Italian seasoning, black pepper, and salt, then pour over the chicken and vegetables.
  • Secure the lid and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  • Shred the chicken in the slow cooker using two forks, mixing it with the vegetables and sauce.
  • Preheat the oven to 350°F (175°C) and slice the hoagie rolls in half.
  • Spoon the chicken mixture onto the bottom half of each roll and sprinkle with provolone cheese.
  • Bake for 5-7 minutes until the cheese is melted and bubbling.
  • Garnish with fresh parsley and cap each sandwich with the other half of the roll.
