Ingredients

1 cup all-purpose flour

1/2 cup semolina

1 tbsp sugar

1/4 tsp salt

1 tsp active dry yeast

1 cup warm water (105°F to 110°F)

1/2 tsp vanilla extract

Oil for frying

1 cup honey (or sugar syrup)

Optional: ground cinnamon or sesame seeds for garnish

Instructions

In a mixing bowl, combine the all-purpose flour, semolina, sugar, and salt. Mix well.

In a small bowl, dissolve the yeast in warm water and let it sit for about 5-10 minutes until foamy.

Add the activated yeast mixture and vanilla extract to the dry ingredients, and mix until you have a smooth, thick batter.

Cover the bowl with a cloth and let it rise in a warm place for about 1-2 hours, or until the batter has doubled in size.

Heat oil in a deep frying pan over medium heat.

Once the oil is hot, use a piping bag or a spoon to drop dollops of batter into the oil, frying in batches. Fry until they turn golden brown, about 2-3 minutes on each side.

Remove the zalabia from the oil and drain on paper towels.

Drizzle with warm honey or sugar syrup before serving, and sprinkle with ground cinnamon or sesame seeds if desired.
