Ingredients
  

  • 9-12 pieces corn tortillas
  • 1 lb ground beef or ground turkey
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz sweet corn, drained
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 2 cups shredded sharp cheddar cheese
  • 1 cup sour cream
  • 1 cup salsa
  • ½ cup freshly chopped cilantro
  • 1 tsp olive oil
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat and cook the ground meat until browned.
  • Add black beans, sweet corn, diced tomatoes, and taco seasoning to the skillet and simmer for 5 minutes.
  • Spread a thin layer of salsa on the bottom of a 9x13 inch baking dish.
  • Layer 3-4 corn tortillas over the salsa, covering the base.
  • Spoon half of the meat mixture over the tortillas, then add half of the sour cream and one-third of the cheese.
  • Repeat with another layer of tortillas, remaining meat mixture, sour cream, and cheese.
  • Top with a final layer of tortillas and spread remaining salsa and cheese on top.
  • Cover with foil and bake for 20 minutes, then remove foil and bake for another 10-15 minutes until cheese is bubbly.
  • Let cool slightly, garnish with cilantro, slice, and serve hot.

Notes

For a fresh touch, garnish with chopped cilantro before serving.
